Apple Pancakes 1 1/4 c Plain flour
1/4 ts Salt
1 1/3 c Milk
1 60 g egg
1 1/2 tb Butter, melted
3 Apples peeled, cored, quartered and thinly sliced
1/2 ts Cinnamon
2 1/2 tb Sugar
Extra butter for frying
Juice of one lemon
sift flour and salt into a bowl. beat milk, egg and butter together.
make a well in the centre, gradually add liquid and beat until batter is smooth.
combine remaining ingredients in a bowl, mix well.
heat butter in pan, place 1 - 2 tablespoons of mixture in pan, cover with 1 tablespoon of apple mixture and a little extra batter mixture.
allow to brown on both sides. drain on absorbent paper and serve hot.
